Cabbage (L. Brassica oleracea family) is another of those healthiest of foods you'll find in the Cretan Diet ! Do I hear you say .. "dah"? Yes that is correct, cabbage is an excellent source of those essential vitamins C, K and B6 that work to cleanse and detox the body. It is also a very good source of manganese, dietary fiber, potassium, vitamin B1, folate, copper and sulphur compounds. If you are seeking potent anti-carcinogenic compounds that rid the body of pesticide residues and any prescription drugs, even after cooking then cabbage is truly your friend as it is full of them. It is up to you to find a great recipe in which to include it to make Cabbage attractive. All three varieties, the Green, White and Purple/Red (used in stews and for pickling) are cultivated all over Greece and Cyprus and history has recorded this fact for at least a 1000 years. Just an interesting note, Brussel Sprouts (cabbage when cut young) is known to cause flatulence.
